Handmade Gourmet Canapés
12 goat's cheese & parma ham morsels, 12 wild mushroom puffs & 12 mediterranean filo bites.
Since I created Bigham’s in 1996, I have insisted that fresh food is the best food. However, let’s face it, sometimes it’s handy to have something in the freezer for those unexpected occasions. Never is this more true than when a few ad hoc nibbles are required. So my chefs & I have been working on a range of canapés especially designed for your freezer. Rest assured that all of the recipes are handmade from the highest-quality fresh produce, only using ingredients that I would be happy to have in my kitchen at home. Preparation time: Cook from frozen in around 20 minutes

Cooking Instructions
WILD MUSHROOM PUFFS
1. Cook from frozen.
2. Preheat oven to 200˚C/180˚C fan assisted/gas mark 6; line a baking tray with parchment paper.
3. Remove all packaging & place the canapés on the prepared tray. Place the baking tray in the centre of the oven & bake for 22–24 minutes.
MEDITERRANEAN FILO BITES
1. Cook from frozen.
2. Preheat oven to 200˚C/180˚C fan assisted/ gas mark 6.
3. Remove trays from the box & remove film. Leave the filo cups in their tray & place directly onto the middle shelf of a preheated oven for 20–22 minutes.
4. Allow to rest for 2 minutes before turning a teaspoon around the edge of the filo cups to ease them out of the tray.
GOATS' CHEESE & PARMA HAM MORSELS
1. Cook from frozen.
2. Preheat oven to 200˚C/180˚C fan assisted/ gas mark 6; line a baking tray with parchment paper.
3. Remove all packaging & place the canapés on the prepared tray. Place the baking tray in the centre of the oven & bake for 22–24 minutes.
Check canapés are piping hot throughout. These instructions are a guide only: all appliances vary. Please don’t reheat once cooked!
